It was bottled without fining, filtering and added sulfur, which preserved its authentic character and lively energy. Hokus Pokus 2017 by Christian Tschida is a fascinating wine that surprises with its lively energy and natural charm. This wine is the result of honest biodynamic work in the vineyards of the Burgenland region, where old vines are grown on sandy and gravelly soils, which gives the wine its unique character. Chardonnay Les Brulées 2020 is an elegant and complex wine that perfectly reflects the character of the Jura. It comes from vineyards that grow on calcareous and marl subsoil, which is reflected in this wine with a subtle but pronounced minerality that gives the wine depth and structural strength. On the nose, notes of ripe fruit appear, especially apples and peaches, which are supported by pleasant buttery accents and a subtle roastiness. On the palate, the wine is full and harmonious, with a delicately balanced acidity that beautifully supports the fruit and mineral notes.

This complex and full-bodied Chardonnay will surprise you with its depth and structure. At first sniff, delicate notes of strawberry and citrus are revealed, which blossom into more sophisticated and subtly spicy accents over time. After a while, the wine opens up and bergamot, anise and refreshing blood orange begin to appear - each breath reveals a new, fascinating layer. The wine is aged on its lees, which adds to the complexity and depth of its flavour. The strongly biodynamic grape cultivation enhances the natural character of the wine and underlines its pleasantly mineral profile. On the nose, fruity notes appear, dominated by citrus and ripe apple, which are gradually complemented by subtle hints of herbs and fresh mineral accents. On the palate, the wine is full-bodied, but still light and elegant, with pleasantly balanced acidity that provides a refreshing finish. Le Blanc 2019 is a "survivor" blend of Chardonnay and Savagnin that survived the heavy hailstorms of 2019, when the hardy grapes remained intact and continued to grow. This unique vintage offers a clean and fresh taste that connects notes of fresh yellow fruits such as peaches and apricots, adding a delicate and elegant minerality that is characteristic of the terroir of this region. Trousseau 2022 from Domaine des Marnes Blanches is a wine that combines traditional methods with a modern approach to biodynamic cultivation. The grapes come from vines between 10 and 35 years old, which grow on limestone subsoil, providing a wine with a fine mineral structure. This Trousseau was aged in a combination of concrete tanks, oak barrels and amphorae for 10 months after maceration of the whole berries, which gives the wine complexity and depth. Microbio 2022 is a fascinating wine that perfectly reflects its terroir and history. The Verdejo grapes come from vineyards grown on mineral-rich soil that has its origins in the ancient Tethys Sea, which spread over 180 million years ago. This ancient background gives the wine a pronounced minerality and salty notes that intertwine with fresh fruity and herbal accents. The fermentation and maturation of this wine took place in old wooden 1050l barrels, which guarantees a delicate integration with the wood and a deeper connection with the local soil, which leaves its unique mark on the wine. After ten months of maturation in barrels, the wine was transferred to stainless steel tanks for two months, which gave it a fresh and delicately fruity character without losing its complexity and depth.

    Ota Ševčík, a winemaker who needs no introduction, will be back in Ostrava. If you were there in 2019, you know that this will be worth it. And if not – now is your chance to catch up.

    Riesling that wakes you up better than a morning shower! Super fresh, juicy and precisely balanced, with a beautifully distinct minerality that reminds you that wine has a soul too – not just taste. The combination of amphora and stainless steel gives the wine both elegance and energy. The result? A Riesling that is clean, lively and unmistakable in character. Lime, green apple, a touch of white flowers and a salty finish that won't let you go. This wine is not a barrique heavyweight affair – it is a precisely balanced elegance from the White Carpathians. The main role is played by Chardonnay with a light touch of Pinot Blanc. It was all matured in French oak barrels and lay honestly on the lees. The creaminess is there, but in moderation. Salinity, minerality and delicate citrus freshness keep this blend in beautiful tension. The result? A wine with the depth, energy and charisma of old bushes, from soils rich in limestone – a remnant of an ancient sea. Born on the Podkovná lines in Strážnice, where Martin Grombíř gives nature and the vines space to breathe. Some of the bushes here are up to 80 years old – and you can tell. Elegant power with the aroma of cherries and poppy seeds. This is no rustic Frankovka – this is a subtle and noble red that plays with fruitiness, but does not let itself be swallowed up by it. Cherries, delicate poppy seeds, a firm structure and acid that hold it all together beautifully dominate. And the aftertaste? Long, clean and layered. The wine comes from the hands of Martin Grombíř, who farms old vineyards in an organic regime in Strážnice at the foot of the White Carpathians. The soil rich in limestone, clay and the memory of the ancient sea gives the wines a distinct minerality, character and depth. Some of the bushes are even 80 years old – and their roots know what they are doing. Subtle elegance with a Moravian soul. Chardonnay by Ota Ševčík is a harmonious, fresh and clean wine that has been aged in oak barrels – but without unnecessary luxury. It is more of a quiet caress than a pompous show. In taste and aroma, it manifests itself with delicacy, balance and precise structure that will delight anyone looking for a decent barrel-aged wine with nobility. Behind this wine is Ota Ševčík from Bořetice, who manages 2 hectares of vineyards with the care they deserve. His relationship with wine is personal and deep – rooted in childhood and guided by humility towards the craft. An ecological approach in the vineyard, manual work and no unnecessary chemicals in the cellar. The wines are not clarified or filtered, which is reflected in their natural purity and expression. mineral beauty with a delicate soul. This Riesling from Bořetice may not be the loudest in the room, but it will get you even more if you give it a moment. Light, precise and elegant, with a delicate structure and a pronounced minerality that is more of a whisper than a shout – and that is what makes it a wine you like to return to. Ota Ševčík imprints his humility and relationship to tradition, which dates back to his childhood, on his wines. He farms his 2 hectares of vineyards organically, with respect for nature and craft. No filters, no clarification, no unnecessary manipulation. Just honest work, aging in wood (oak or acacia) and a result that speaks for itself. The Horst Hummel winery, founded in 1998, is located in the prestigious Villány region, known for its ideal climate for growing both red and white varieties. Portugieser, Kékfrankos (Frankish), Cabernet Sauvignon, Cabernet Franc and Merlot are grown on 7.5 hectares of vineyards. Hárslevelü and Furmint come from leased vineyards, while Traminer is produced from purchased grapes.

Since 2008, the winery has been run in accordance with the rules of organic viticulture, in 2016 it began using biodynamic preparations, and since 2020 it has been managed according to the principles of Natural Synergetic Winegrowing (NSW) - a method that Horst Hummel himself developed. This results in pure, authentic wines that respect the terroir and natural character of the grapes.

White wines ferment on the skins for 3–20 days and then mature on the lees in tanks or used barrels. Red wines ferment in open containers with gentle extraction and then mature for up to two years in tanks or used oak barrels of various ages and origins.
