The classic form of Pinot Gris. Hrozný comes from the Zadní vineyard (Zadní hora), which is of course treated organically. After the harvest, spontaneous fermentation took place along with maceration of whole berries. The wine then matured for 18 months in oak barrels. Unfiltered, unfined, nothing extra was added except for a small addition of SO2 before bottling.

"We don't have any sweet ones and don't ask us, you'll just piss us off," says the sign on the wine boxes, which you'll see right after entering Jaroslav Osička's painted cellar in Velké Bílovice.
The history of his Bílovice cellar dates back to the 17th century. He labels his "true to nature wines" with the letter A - as in Autentisté.
The entire Osička family takes care of 3 hectares of vineyards. They bottle around ten thousand bottles a year. However, in Moravia, where they are produced, they are almost never sold. On the other hand, you can order Jaroslav Osička's wines in the most prestigious restaurants around the world.
Jarda Osička does not want to "produce" wine, but rather helps it in its creation, which is why he only slightly directs it so as not to suppress the vintage and soil differences. The wines mature in wooden barrels. They remain on fine lees for 5-24 months with occasional stirring. Bottling takes place without filtration.
