Fidji 2022 continues the adventure of the 2021 vintage with a 2-week maceration of Gewürztraminer. This vintage, like the previous one, ferments in stainless steel tanks, which preserves freshness and ensures the lightness and digestibility of the wine.

O2Y Winery, founded in 2020, is synonymous with authenticity and a 100% natural approach to winemaking. O2Y wines are created without any inputs, using only native yeasts, which guarantees their unique character. In 2022, the winery took a significant step – it began to manage its own vineyards in Arbois and Poligny (1.3 ha of Pinot Noir, 0.43 ha of Savagnin and 0.6 ha of Poulsard/Trousseau). The grapes are grown organically and without the use of chemicals, which is reflected in the first vintages from its own vineyards, which combine freshness, aromatics and purity.
Created with passion and sensitivity by Olivier Guala, O2Y wines celebrate the art of natural winemaking. They are accessible to both wine lovers and those who are just discovering the magic of natural wines.
