A loose translation for Fedellos do Couto is "Bastards of Couto". Couto is a 12th-century estate in Ribeira Sacra right in the heart of the vineyards, owned for generations by the family of Luis Taboada, who is one of the partners of the Bastards. The other two are Curro Barreño and Jesús Olivares. They do everything in the vineyard by hand. It is not possible otherwise even in steep terraced vineyards. The vineyards are planted mainly with native and wild varieties. The wines ferment spontaneously at low temperatures. All their wines are very delicate, fresh and, thanks to the slate subsoil, pleasantly mineral.
