Production:
– this is what happens when you combine the best that Vysočina has to offer in the form of apples and Pinot Noir grapes from David Kušický from Velký Krtíš. Every year we make wines for our own use, we buy the grapes from our friends, in this case from David. We let the wine macerate for only 3 days, then pressed it by hand (put it in a barrel and made our own pinot) and poured the juicy grapes with fresh apple cider from Vysočina, from the Matčino variety, which I consider to be the best that a cider maker can have.
– maturation in stainless steel took place for 2 months and the apple cider lay on the Pinot Noir skins the entire time. That is, 60 days of maceration. Bottled in the ongoing fermentation process after two months of maturation in stainless steel
– alcohol 5%
– No added sulfur or other additives, Unfiltered, Unsprayed apples
The taste and aroma can be found with attractive notes of strawberries, cherries, fresh flowers, raspberries, rare spices and meadow honey

Fate wanted it, and sent Lukáš Joudal to the other side of the planet - where? To a country flooded with sheep. By coincidence and happy coincidences, he got a job at a local cider house: Peckhams cider. The local vibe, colleagues, location and great work. All of this started a love for this drink - yes, and also a tendency to drink.
Full of enthusiasm, after 3 years of traveling, he returned to his native lump, because the time was just breaking between summer and autumn (the wise already know - it's harvest time), he quickly bought 3 first apples and set out to look for apples - not a difficult task, thank goodness the republic is de facto overwhelmed with apple trees. At this time, another happy event happened, I met a key person who became my coach, mentor, Jedi Master and I her Padawan. From now on, I share the hard work with Michal Lacina. They produced the first few bottles together in 2019.
