Pecorino is a historically typical variety for the Italian region of Abruzzo. This Pecorino fermented spontaneously, was not filtered or clarified and is absolutely sulfur-free. The grapes come from a young vineyard on clay and limestone soil. It matured for 10 months on the yeast in stainless steel tanks.
