The sun in a bottle. A light, fragrant pét-nat that doesn't deal with complexity and instead focuses on the joy of drinking from the first sip. Sunny Side Up 2025 is a playful blend of Moravian Muscat, Müller Thurgau and Pinot Gris from organic vineyards in Znojmo. In the glass, expect juicy citrus, white flowers, grape freshness and a delicate touch of stone fruit. The bubbles are more delicate than wild, so the wine has a light, refreshing impression and disappears surprisingly quickly. The alcohol content of around 10% also makes it an ideal companion for long summer evenings. Martin Vajčner lets the wine develop with minimal intervention. The grapes come from organically cultivated vineyards, fermentation takes place spontaneously in glass demijohns and the final fermentation is completed naturally in the bottle. No filtration, no fining and no added sulphur. Exactly the type of natural wine that retains the energy and character of the place where it comes from. It works great with picnics, Asian cuisine, grilled fish or just on the balcony with a bunch of friends. In the glass, it impresses with its bright ruby color. The aroma is dominated by notes of fresh cherries and raspberries, complemented by a delicate herbal line with a touch of thyme. The taste is beautifully balanced - it combines juicy fruitiness with fine tannins and pleasant freshness. The result is a wine that is easy to drink, but at the same time sufficiently full and structured.

Martin Vajčner focuses on producing wines that clearly show the region where the grapes come from. Each region and vineyard route is characterized by a different soil composition, different altitudes, different amounts of precipitation, or even the amount of sunlight. He tries to make wines in such a way that the manifestations of all these factors are as clear as possible. Nature itself determines how the wines will taste in the end, which is why he minimizes interventions in the cellar. The range of colors, flavors, and aromas is so varied and fun. At the same time, he tries to ensure that his activities are in harmony with nature even in the vineyards, where he uses only biological sprays. He considers high-quality green work to be the basis for preventive vine protection. 
The mash is macerated for several hours to days on the skins and stalks. In the case of clay kvevri vessels and amphorae, maceration on the skins and stalks lasts several months (kvevri vessels are stored in a sandstone cellar in Oblekovice; ceramic amphorae from Keramika Poštorná are stored in a cellar in Hodonice).
The must is gravity-drained and poured into oak and acacia barrels or glass demijohns. Spontaneous fermentation follows thanks to the vineyard's own yeast.
The wines mature for a long time on coarse or fine yeast and are blended as needed.
