This is not a quick-sip white. This is Jura that sits down at the table, looks you in the eye and starts to tell a story. Les Varrons Vieilles Vignes 2020 is a Chardonnay from old vines that doesn't rely on fruit, but on tension. Expect citrus peel, yellow apple, almonds, light smokiness, a salty touch and that typical Ganevat energy, when the wine feels deep but never heavy. It has nerve, length and calm strength. It will entertain those who love great white wines without polished sterility. Burgundy in the head, Jura in the blood. Ganevat works biodynamically, with minimal intervention and enormous patience in the cellar. Here you can smell time, old wood, yeast, stone and vineyards more than wine cosmetics. Give it a large glass, a carafe if you will, and food with depth: poultry, mushrooms, mature cheese, cream sauces. A wine that doesn't beg for attention. It just takes it.

Jean-François Ganevat and his sister Anne come from a family of winemakers with a long tradition. Fanfan, as his friends call him, together with his sister Anne, farm almost 10 hectares of vineyards in the village of Rotalier in the south of Jura. More specifically - Fanfan takes care of the wine, Anne takes care of the viticulture. They mainly grow Chardonnay, Savagnin, Pinot noir, Trousseau and Pulsard. Fanfán and Anne have been operating in a biodynamic regime since 2006. Some of the vineyards even date back to 1902 and 1919. Jean-François apprenticed and worked at Domaine Jean-Marc Morey in Chassagne-Montrachet in his youth. 

Fanfan's goal is to highlight the terroir, grape variety and winemaking style. With less than 10 hectares of his own vineyards, he has very low wine yields. Combined with the huge demand for his wines, their shortage has arisen. Francois and Anne decided to solve this precarious situation with so-called "negos" grapes. Negos means that they buy grapes from their friends from Burgundy, Jura and Alsace, who respect their vision of natural wine. Fanfan "turns" the grapes into wine himself in Rotalier and gives them the same care as his own grapes.
