Aleš Kovář
Aleš's effort is to let the Znojmo terroir stand out as much as possible in combination with the specifics of the current vintage. He believes in the unique combination of granite subsoil, location and a gentle slope ending in the Dyje River. He cultivates almost 50-year-old plantings of traditional varieties. In the cellar, he follows the principle of "adding nothing to the wine and taking nothing from the wine". After the harvest, the wine is given enough time before it goes into the bottle. The wines mature for at least a year in wooden barrels and on yeast. Then they mature for some more time in bottles. In the vineyard, everything is done with maximum humility towards nature.
