Thomas Pico founded his small winery in Courgis in 2005, just outside the village of Chablis, under the wing of his friends and organic fellow Chablisiens, Alice and Olivier de Moor. He inherited 2.4 hectares of vineyards from his family, which had historically produced correct but uninspiring wines. Motivated by "doing things differently" and against his father's wishes, Thomas immediately began a program of strict yield control and conversion to organic viticulture. This is a rarity in Chablis and in this often inhospitable wine region, the vineyards require extreme care.
The wines are fermented with indigenous yeasts, matured for at least 14-16 months, sometimes longer. The wine is bottled without fining or filtration. He works with concrete eggs, stainless steel and wood.
