 Nicolas Jacob is a perfect example of authentic natural winemaking, combining tradition, passion for wine and a deep respect for nature. Nicolas Jacob, a native of the Jura region, began his winemaking journey in 2015 when he purchased 1 hectare of vineyards in L'Etoile. After his experience at Domaine Macle and his collaboration with Jean-François Ganevat, he gained confidence in his abilities and in 2019 expanded his holdings with another 5 hectares of vineyards in small plots in the south of the region.

Nicolas focuses on organic and biodynamic viticulture, producing all his wines without chemical inputs, which guarantees their purity, concentration and authenticity. His wines reflect the character of the terroir, bringing freshness, aromatic depth and balance, making them the ideal choice for lovers of natural wines.

Nicolas Jacob wines are the result of meticulous work and attention to detail. Fermentation and vinification take place in a small cellar under his house in Cesancey, where each small parcel is treated individually to bring out the wine's maximum potential. This process, inspired by his mentors, demonstrates his mastery of élevage, deciding on the final blend only after a rare level of clarity and concentration has been achieved.
