Les Dolomies
Céline Gormally, who founded the winery in 2008, farms around 5 hectares of vineyards with the help of her husband Steve. The fields, as she calls them, are maintained without herbicides or pesticides. She avoids mechanized methods by using biodynamic principles and compost. She farms the vineyards with donkeys. As a former vice president and current member of “Le Nez Dans Le Vert”, she is committed to an organic lifestyle.
Les Dolomies takes its name from the magnesium limestone found in the area. It is one of the best geological soils for grape varieties in the Jura region.
Céline is a fighter and a true believer in the beauty of the wines from this area. She was helped by Earth Links (an organization that helps organic farmers) to initially acquire the vineyards. After several years of working in the vineyard, with the utmost respect for nature, she gradually began to sell wine and is now a highly sought-after producer for gastronomic establishments, including top restaurants such as Noma in Copenhagen.
All wines are spontaneously fermented, with little or no added sulfur. Production is around 10,000 bottles per year.
