Papari Valley
The winery operates on less than 10 hectares of vineyards on the slopes of the Gombori Mountains overlooking the North Caucasus. They mainly grow local varieties - 80% Sapevari and 20% Rkatstiteli. Papari Valley was for a long time only a family micro-winery. They decided to release their wines to the world for the first time only in 2015. The wines are produced using the Kakheti method. The wines ferment spontaneously and mature in the ground in buried qvevri. The winery has 21 qvevri - each of them is bottled separately, so it is possible to taste wine from the same vintage but from a different qvevri. Their goal is to connect the classic Kakheti method with modern winemaking - but without using anything extra.
