Many things were not lacking and Valentin Morel became a lawyer instead of a winemaker. He actually became one, he even has a degree from Strasbourg. But instead of a lawyer, he chose winemaking and in 2014 he took over the winery from his father, which he had run organically since 1985. Thanks to his knowledge of the teachings of Rudolf Steiner, Valentin converted the winery to a biodynamic regime. Valentin farms 8 hectares of vineyards. He avoids intervention in the cellar and lets the wines ferment and mature spontaneously. The fermentation and maturation process takes place in stainless steel and wooden barrels. The wines are not clarified or filtered.
