Philippe Bornard
Višák Philippe Bornard makes wine in the village of Pupillin near Arbois and the Swiss border. He inherited the vineyards from his father, who previously only sold grapes, not processed them. Philippe originally wanted to continue this model, but the legendary Pierre Overnoy convinced him to start producing his own wine. What a treat! Now Philippe Bornard farms 6 hectares of 30-40 year-old vineyards.
Since 2012, he has been biodynamic certified. The grapes are grown at high altitudes, on limestone and clay soils, which allows for slow maturation. Typically, the wine begins with a long, slow maceration in glass amphorae and is then transferred to large, older oak barrels for maturation, which lasts at least one year. His wines are divided into two regions: Côtes du Jura and Arbois-Pupillin, and beautifully reflect the terroir of Jura.
